Alluma is a chef-driven Mediterranean restaurant located on rue Saint-Maur in Paris 11. We serve à la carte at lunch and dinner, and offer a Carte Blanche tasting experience on Wednesday and Thursday evenings.
What makes Alluma's cooking different from other Mediterranean restaurants in Paris?
We often work with lesser-known ingredients, or reveal an unexpected side of something you think you already know. Each dish starts from a single raw ingredient and offers a precise reading of it, designed by chef Liran Tal.
Who is the chef at Alluma?
Chef Liran Tal is self-taught, having started cooking from a young age. After several years training in respected Paris kitchens — including Balagan and Dersou — and working as a private chef for high-profile clients, he founded Alluma in 2022 with Noa Tal, to bring his own vision of free, personal Mediterranean cooking to life.
What is Alluma's signature dish?
Two dishes come up often in guest feedback: the lamb three ways (sirloin, flap, and tartare), served with sweet potato cream and apricot, and our celery cacio e pepe with Pecorino and black pepper.
Is Alluma Michelin starred?
Alluma is not Michelin starred but is listed in the Michelin Guide. It was also selected by Condé Nast Traveller as one of the 21 best new restaurants in the world in 2023 and is featured in guides such as Lebey and Le Fooding.
Do you offer a 6-step tasting menu?
Yes. On Wednesday and Thursday evenings, we offer a 6-step Carte Blanche menu. The chef builds the menu on the spot based on seasonal products and daily inspiration.
What is Carte Blanche?
Carte Blanche is a tasting menu entirely designed by the chef in real time. Guests do not choose individual dishes.
How much is the Carte Blanche?
The 6-step Carte Blanche menu is €55 on Wednesday and Thursday evenings.
How long does the Carte Blanche dinner take?
It depends on the pace of the table, but expect around an hour and a half.
Do you offer vegetarian options?
Yes. Our à la carte menu includes vegetarian dishes, and the Carte Blanche can be adapted to a vegetarian format if requested when booking.
Can dishes be adapted for allergies?
Yes, whenever possible. Guests must inform us of any allergies or dietary restrictions when booking.

How do I book?
Reservations are made online via our website. The Wednesday and Thursday Carte Blanche requires advance booking.
Do you accept walk-ins?
Yes, depending on availability. However, Carte Blanche is available by reservation only.
Is a deposit required?
Yes. Some reservations require a credit card guarantee to secure the table.
What is your cancellation policy?
Late cancellations or no-shows may incur a fee according to the conditions specified at the time of booking.
Do you offer private dining?
Yes. We host private and corporate events. Requests can be submitted via the contact form in the Services section of our website.
Can I book a large table without privatizing the restaurant?
Yes, depending on the size of the group, the date, and the service. Contact us directly to check availability.

Where is Alluma located?
Alluma is located on rue Saint-Maur in Paris 11, near Oberkampf and Belleville.
Do you have a terrace?
Yes. We have a terrace from April through the end of October.
Is Alluma suitable for children?
Yes. Children are welcome. We do not offer a children's menu and we do not adapt dishes for kids. If you need space for a stroller, please tell us in advance so we can book the most suitable table.
Is the restaurant accessible?
Yes. Both the dining room and restrooms are accessible. Please inform us in advance so we can assign the most suitable table.
What kind of wines do you serve?
All our wines are organically farmed, mostly biodynamic, with a significant proportion of natural wines. Our selection spans Armenia near Mount Ararat, Greece, Sardinia, Serbia, Spain, Italy, and selected French regions. We feature pét-nats, skin-contact wines, and small-production cuvées chosen for their energy, precision, and character.
What payment methods do you accept?
We accept card (including Amex and contactless) as well as cash.
Does Alluma offer gift cards?
Yes. Alluma gift cards are available online via Secretbox.
Apéro & Wine
What is Apéro at Alluma?
Apéro at Alluma takes place on Thursdays from 18:30 to 19:30 and includes small plates designed to accompany early evening drinks.
Can I come just for drinks?
No. Alluma does not hold a standalone bar license: drinks must be ordered alongside food. We have created a dedicated Apéro menu designed to accompany drinks.
Do you serve natural wines?
Yes. A significant part of our wine list consists of natural wines, alongside organic and biodynamic producers.
Can I order wine by the glass?
Yes. Alongside a rotating selection of white and red wines by the glass, we always offer at least one pét-nat and one orange wine by the glass. The selection changes regularly.
Who put together Alluma's wine list?
The list was initially built with Emmanuel Delmas, former sommelier at houses including Plaza Athénée, Lasserre, and La Tour d'Argent. It has evolved regularly since, always centered on organic, biodynamic, and natural wines, from France as well as interesting origins around the Mediterranean and beyond.
